Day 11 - Finally Friday!

Hey friends! ::yawn:: I hardly slept a wink last night - must have been the combination of getting home late + having a stuffy nose and tummy rumbling.

Breakfast: Probitoic Yogurt
(After Craigy B left for work I decided to take a nap as I was feeling tired and weak)
Woke up at 11:30am - sad that I didn't make it to the gym (as opening hours are 9:30-11:30).

Made lunch: veggie stir fry with chicken

Applied for jobs - cleaned around the house.

Around 4pm got ready to go into Durham for Siren's Birthday - It is my local salon/spa I go to for pampering.

At party met lots of lovely ladies, had my nails painted (see photo) - they were giving demos of airbrushing makeup, and other services



8pm Craig picked me up

Watched TV. Did a load of laundry.

Oh and one last thing! I weighed myself today! I have lost 6lbs!!!

Day 10

Thursday post will be very short.

Breakfast: Probiotic Yogurt
Gym
Lunch: stir fry of various veggies
Dinner: Chicken kebabs with veggies

Then we went to Hartlepool to see Craig's friends

Day 9 - Wacky Wednesday

Nothing is really new with me other than I am looking for my next job, continue going to the gym (in the AM) and stay on top of my diet.

Day 8 - Happy Tuesday!

Good evening - or maybe you are reading my post this afternoon.  I have completed another day of my 17 day diet! Since I finished my last contract job at the moment I am now able to attend the community gym in the morning - and continue with my job search. The weather has been nice and sunny - then the clouds rolled in.

I finished my 1st assignment of my Coursera class! It wasn't so bad. Each student needs to record for 1 day a food/exercise log - we then have to enter our details on SuperTracker after all the data is entered we can view reports of our daily totals - and one of the forms I had to send for my assignment was my totals of nutrients.  I then had to answer 5 questions in paragraph format about why 2 nutrients was I under or over the recommended guidelines, and other questions (I can't really remember off the top of my head). I am already ahead of the pack because this assignment is due July 7.

Breakfast: a poached egg with 1 probiotic yogurt
Went to Gym
Lunch: Stir fry of veggies - zucchini, ginger, garlic, red and yellow peppers, and eggplant.
Snack: Baked Apple and banana with a sprinkle of cinnamon, lemon juice and drizzled with olive oil
Dinner: Turkey Stir Fry

Snack/Dessert: 2nd Probiotic yogurt



Hugh Laurie concert - Sunday June 23, 2013

As I mentioned in a previous blog post Craigy B and I attended a concert last night. Unfortunately I wasn't able to write a post as we came home quite late.  Below are photos before and during the concert. We had a great time! Had a light dinner snacks (Yes I followed the diet!) Chicken Kebab with veggies + a house salad and tap water to drink :)

Day 7

Wow! I can't believe I have already been on this diet for a week - how time sure does go by quick!
I am counting down the days when I can start eating whole grain products (which will be July 4th)
Craig and I have talked about hosting a 4th of July party (probably just the 2 of us! and indulge in American style food.

Today is the first day of my Coursera class - which I discovered from a good friend named Kate! She said these are free online courses from accredited institutions.  For the next 6 weeks I will be attending (virtually) Nutrition for Health Promotion and Disease Prevention! At the moment I have been learning about different nutrients.  Once I complete this course I will get a certificate or statement of completion I can include on my resume!

As my Post mentions at the top today is Day 7 of my diet!

Breakfast: Probiotic Yogurt

10:30am - Gym for 1 hour

Lunch: various chopped up veggies - stir fry in light soy sauce

Snack: 1 Chopped up apple - sliced - put into a pan - drizzle little olive oil and lemon juice - sprinkle cinnamon- put in oven for 15 minutes and it is pure YUMMY!


Dinner: Turkey Lettuce wraps with various veggies


Day 7 - Sunday

Hi friends! Wow I can't believe the weekend has flown by so fast! We are going to be in July soon. I am getting very excited about my trip home with Craigy B. Silly me - I am counting the days but I love doing countdowns!

Well onwards you probably want to know how my diet is going. This morning I weighed myself and since Day 1 I have lost 6 lbs.

Breakfast: Probiotic Yogurt, sliced strawberries

Lunch: Craigy B made an omlette for us - filled with beets, red onion, chicken and a little bit of garlic

For Dinner (we ate early as we are attending a Hugh Laurie concert this evening) - Craig made Lettuce Wraps for us


We then left a little after 4pm to go to The Sage to see Hugh Laurie and the Copper Bottom Band in concert - photos will be on Monday's post.

Day 6 - Saturday (Ooops! I have posted late - sorry)

Greetings friends and family too! Sorry I should have posted yesterday about Day 6 but time flew by and I went to bed pretty quick! Here is the outline of my day with Craigy B

Breakfast: Probiotic yogurt

Then we went grocery shopping at Morrisons - (sadly no photo taken this time) but we have a fridge full of fresh veggies, fruit, probiotic yogurts, and turkey, chicken and fish are in the freezer. Thankfully I found a coupon to use as we spend a whopping

£45.

Lunch: Craig made an omelette - with chicken

 We then decided in the afternoon to go to the movie theater and saw Despicable Me 2

Skyped with mom.


Dinner we had: 

Turkey with various veggies - Peppers, Chinese Lettuce, Spring Onions, Ginger and Courgettes.

Day 5 - Friday

Hello friends! Today was my last day working at Durham University - I am sure I will find new work. Everyone was nice and said bye to me. I wanted to share with everyone my progress - as it is very good to stay determined and share this with you!

Breakfast: 1 Probiotic Yogurt and I shared a container of sliced mangoes with Craigy B

Lunch: Sliced Turkey with a container full of Strawberries, Grapes and sliced apples.

Dinner: Turkey Stir Fry

Day 4 - Chucking Along..

Greetings friends! Day 4 of the diet has just finished! All is still going well - though it has been hard not having dairy products, sweets or even other types of meats such as ham, salami etc.

Here is a summary of my day

Breakfast:  Probiotic Yogurt and diced strawberries

Snack: a banana

Lunch: Sliced Turkey and Chicken with 3 mini sliced apple packets

Dinner: Stir Fry Turkey with Veggies

Then I went to the Gym.

Day 2 - and the beat goes on...

Greetings friends! Day 2 and I have survived another day! This diet is going pretty good.

Breakfast: 1 probiotic yogurt and pineapple chunks

snack: banana

lunch: sliced turkey breast and water

at 3pm I had a slight hiccup - because work has been dragging on I had 2 cookies (they weren't big!) I was feeling tired .

Dinner: Nice Veggie and Chicken Open omelet


Went to gym and had my 2nd probiotic yogurt when I got in.

 

Stroke - Faint - Pass Out : How do we determine this?




Every morning I ride the purple bus into Durham for work – usually the bus is either on time or late.  Today it was late but I was patient enough to wait.  I like to sit towards the front of the bus – I guess so I can get off right away.  Well today was a day I won’t forget – As we approached Durham a girl – I want to say in her teens passed out cold. She was sitting next to another woman who was quite alarmed and didn’t really know what to do – except hold this girls body and say ‘everything is going to be alright’.  A passenger that sat across from me went up to the bus driver to stop and call 999. I could tell everyone was feeling shaky and worried.  I didn’t know what to do – but my first instinct was to ask – is there a medical professional? But nobody replied. A friend of this girl said these episodes happen often – he didn’t really know why.  The bus driver pulled over to the nearest stop and opened the door.  A young man sitting next to me helped pick up her body and I collected her purse – he brought her outside. She laid flat on the pavement with 2 of her college friends. I am not sure how long she was out for but this was a very scary moment for me!

As a citizen of the world this could have happened anywhere! I felt the need to help out - even though I have not been trained or know any medical terminology.   How can we tell the difference if this was a stroke or cardiac arrest etc? I don't have the answer.  A coworker of mine mentioned I should contact the Red Cross - and I might do so. 

If I can help save a life or at least try that will make me smile.

When I got off the bus and walked past a few shops I saw the young man opening up the shop where he worked and I said thanks for helping her out! I am happy there are good people in the world.

Day 1 - The Beginning

Today is phase 1 of my 17 day diet! All has been going great.  Thankfully today I didn't have to go to work as I requested a day of vacation because I had a doctor appointment today regarding my nose and how I can get relief as I am having constant stuffy noses which interfere with my sleep.

 I hope this post will motivate people to join me (or at least make a change) to their health and how they eat.

Here is an outline of my First Day -

Breakfast: 1 Probiotic Yogurt

11am snack: 1 Banana

Went for a 30 minute walk

Lunch: 1 poached egg.  I also made a stir fry of vegetables with a drizzle of light soy sauce

A small trick on how I am making water taste better: I chop up some cucumbers and add lemon juice

After my Dr appointment I had my 2nd probiotic yogurt

Craig came home - Dinner is steamed chicken and veggies.

Off to gym afterwards!

A new journey starts: To get Healthy and Fit - Craig & I are going on a diet

A few weeks ago I received an email from my mom asking who would be interested in joining her on a 17 day diet. I immediately said yes and was determined to lose weight and get fit! I have tried diets in the past but I have fallen off the band wagon somehow - but this time it will be different! I would get further information from my mom via post of how to follow through. 



I am really happy Craig is joining me on this diet - though he wants to turn this into a competition and snickers sometimes and says he is going to win!

To get all prepared for Day 1 (which is tomorrow)

  • I have purchased a scale - which will keep us on track and give us motivation
  • Went to Morrison's today and purchased 2 weeks worth of Vegetables, Fruit, Probiotic yogurt, and chicken/fish and turkey.
  • We purchased Brita water bottles (we will need to drink 64 oz of water each day)   

 Will keep everyone posted on my progress (and maybe Craig's too)

Work Experience - My path

What a whirl-wind ride I have been on - taking on the adventure to move to England, have no job prospects, only a specific amount of money and 2 suitcases. At first I was terrified and scared that it was going to take me forever to get a job.  I thought with having a MA degree from a UK accredited University would secure a job for me right away - well I was wrong!

As a foreigner it has been quite the roller coaster applying for jobs because I am competing against natives , other foreigners and EU people.  I don't know why it took me 3ish months to find a job when I have a great work experience and education background. - but I did it! With the help of networking through my Twitter community and doing various Google searches I stumbled upon NRG. I had the opportunity of meet Alison Jobson during my informal interview and got registered right away. She has a very bubbly personality and is easy to talk to.

Once I met Alison I told her that I was interested in positions in Durham or Newcastle - and starting mid September I was at Durham University (major company/organization) in Durham! I was very happy and thrilled that I wouldn't have to spend ages on multiple buses or getting the metro from the train station. It is just a 20 minute bus ride into Durham and a 10ish minute walk. Easy peasy lemon squeezy!

My first job I was placed on was at the International Office.  I assisted the study abroad and exchanges team but also worked various other projects for other team members. Everyone welcomed me with open arms and wanted to know my story - a very relaxing, fun environment indeed! I made good friends with a few ladies and continue to stay in contact with them via email and meet with them over lunch.  I also was able to attend my first English Christmas Party Lunch - this was a nice elegant meal served by the restaurant in the Palatine building - on the plates were crackers, which I have seen before but are not as common back home. 

My next job started middle of January - at Durham Student Union working in the Finance Department. Unlike Durham University the atmosphere seemed more casual and relaxed - I guess mainly because it is for the students. At first I remember I was nervous because I didn't really have a finance background - but Claire and Stacey my colleagues showed me the ropes of the job.  In the Finance department there only consisted of 4-5 other employees so it was a good atmosphere to get to know everyone. I became good friends with a woman named Deborah, who works on a PT basis, but is very cool! Even though she isn't my age - I get along with her so well! She kept me company during lunches etc. I continue to stay in contact with her and meet up from time to time even though I am not at the DSU anymore. 

My most current job started middle of May with Access and Student Recruitment, funny enough they share an office with the International Office. On my first day (when some are nervous) I was excited to see everyone again. I met with Jen who was one of my supervisors and she introduced me to everyone and showed me my desk. Now everything seems a blur - I have been helping out with getting Open Days materials ready, filling big brown envelopes for UCAS fairs etc. My last day in June 21st and will take my experience and smile on having this opportunity!

Onwards I go - Just like a bird - Flying high and squawking along!!

Durham Regatta

Hi folks! This is a delayed post of my activity yesterday.

I learned on Friday from a coworker there was going to be a Regatta over the weekend in Durham - I immediately went on google to find out what it was. Craig and I went early morning and rode the bus. It was a really sunny day so we were smothered from head to toe in sunscreen. Once we reached town - it seemed to be packed atmosphere! Street vendors and the marketplace was BOOMING! We headed straight to Starbucks and enjoyed a beverage + breakfast contemplating where to go next. Afterwards we headed to one of many bridges in the city to see the various teams practicing their rowing techniques.  I am including lots of photos Craig took. The Regatta reminded me of the Olympics.  Just UK universities.

It's time to get FIT!

Good evening friends and family! Wow I can't believe how May flew by so quick and now we are in June. What a whirl-wind life has been for me with accepting another temporary job at Durham University middle of May - getting fit by joining the community gym - to now being the assistant chef in the kitchen (yes Craig has finally allowed me into the kitchen, and I actually help out!). 

I have so many fond memories of June - from graduating from Edina High School in 2002 to Papa's (RIP 1999) birthday  to many father day events with my dad. June is also the start of summer - filled of sunshine.

I wanted to mainly blog about my evening - my first night at the local community gym.
Craig and I went to the grand opening a few weeks ago to check it out - and I decided to invest 15 pounds per month by working out (by myself) but I have met some intersting people so far.

I met 3 women in the gym - all looked like they were in their late 20s to early 30s. It was nice to chit chat with them - sometimes it is awkward when men are also in the room. We all got to know each other a little and they asked me if I was a mom. I was astonished to find out a girl who looks a few yrs younger than me has a 5 year old. I like kids - don't get me wrong but I don't think I could imagine having one at the moment.

Also What is up with young people smoking? Especially after a work out? I don't understand that!You are working out be healthy - or that women don't wear sports bras, shoes. The proper work out attire usually calls for sneakers, a sports bra, a top and shorts/track bottoms.



Here are the grand opening photos of the gym - it isn't fancy but it is affordable and gets me out there.


In my journey, I will continue exercising and eating healthy every day.
